Hey [personal profile] mmmusings(aka Ms. Stepford) ... want to make me an icon for Susie Homemaker? (ETA: Check out the icon!)

So, I've been home since around 3:30ish, and I've cooked dinner and I'm in the process of baking cookies.  I've also got bread going for dinner tomorrow night.  Yes, it is me, Susie Homemaker, at your disposal.

Well, don't get too excited.  The cookies are frozen dough that you break off and bake, and the bread is frozen bread that you thaw and bake.  The recipe is an easy one, that's new to our house.  I thought it was really good.  The kids were split (my two picky eaters didn't like it), and hubby's doing trash, so he's not tried it as of yet:

Three-Cheese Spaghetti Bake

1 pkg (16 oz) spaghetti
2 cups (8 oz) shredded mozzarella cheese, divided
3/4 cup grated Parmesan cheese
1/2 cup grated Romano cheese
3 eggs, beaten
1 TBSP olive oil
2 tsp garlic powder
Salt and Pepper to taste
1 jar (28 oz) spaghetti sauce

Cook spaghetti according to pkg directions; drain.  Toss noodles with 1 cup mozzarella, parmesan, romano, eggs, oil, garlic powder, salt and pepper.  Press into a greased 13 X 9 baking dish.

Top with spaghetti sauce.  Cover and bake at 350 degrees for 20 minutes.  Uncover; sprinkle with the remaining mozzarella.  Bake 10 minutes longer or until heated  through and cheese is melted.  Yield: 6-8 servings.

As I cooked the spaghetti, I combined the cheese, garlic powder, salt and pepper in a bowl, beat the eggs in another bowl and added the olive oil.  Once the noodles were done cooking, I drained them, then added the egg/oil mixture, tossed and then added the cheese/seasoning mixture and tossed some more.  This made it so fast to throw together.  One recommendation - break the spaghetti into smaller pieces to make it a bit easier to serve.


It is a really nice afternoon/early evening.  It was 83 degrees, sunny, with a slight breeze.  I have the windows open, the ceiling fans on, and the house is really pleasant.
