...and the kids are on a two hour delay.

Which made my morning a bit interesting...because someone had to stay home with them.  Guess who volunteered was elected. So we are leaving around 9 to drop the youngest at the sitters and take the others to school.

Which makes me between 2 1/2-3 hours late for work.  and I still have to leave early to get the boys off the bus at the end of the day.

I do have to say, our school and the public system we are a part of very rarely ever delay school.  They rarely close for weather, and it's even rare that they delay.  I think in the seven years I've had kids in school, I think we've only delayed 3 times.  We've closed about half a dozen times. I think what happened today was it's been so warm that the road crews thought that the snow would hit the roads and melt.  I think it did that at first, but it then got well below freezing, and the roads quickly froze.  So there was no preventive salt put out, and now they're trying to catch up.  Almost every school in the area is delayed.

So, I'm home, drinking a cup of coffee, catching up on email.  I bleached my sink, started a load in the washer, and started my dishwasher, in addition to finishing up the dishes that can't be put in the dishwasher.  I also starte Tortellini Soup in the crock pot. It's amazing how much I can accomplish with an extra couple hours at home.

The boys are playing until it's time to leave.

(Sorry -- I deleted other reply -- only had it half written and inadvertently posted it!)

This is a very, very simple recipe. It can be done on the stovetop or in the crockpot.

Amounts of the stuff that goes in it vary based on your tastes.

I use:

1 onion, cut up
4 cloves of garlic, pressed through garlic press
1 stick butter/margarine
1-2 large cans cut up tomatoes (I use 2 cans because of the volume of soup I have to make -- you can use just one can just fine)
4 cups chicken broth (I use 4 chix boullion cubes with 4 cups of water to make up broth
1-2 bags of frozen cheese tortellini
1/4-1/2 bag of chopped frozen spinach.

sautee the onion and garlic in the butter (I do it in the microwave for 3-3 1/2 minutes).

Add onions/garlic/butter to pot, add chopped tomatoes and broth. Bring to a boil, reduce heat, cover and simmer for however long you'd like (I'd simmer at least 30-60 minutes). About 20-30 minutes before serving add the bag of frozen tortellini and spinach. Stir and cover, turning up the heat slightly, to heat the tortellini and spinach. Allow to cook and simmer for 20-30 minutes. Serve with bread.

For crockpot -- just add the sauteed onions/garlic/butter to crockpot, add the broth and tomatoes, and cook on low all day. 30 minutes before serving add in frozen tortellini and spinach, stir, replace lid and cook on low for 30 minutes. Serve with bread.

Simple, simple.
